Fisch erzeugen heterozyklische Amine. Diese Substanzen entstehen als Folge
einer chemischen Reaktion zwischen den Aminosäuren und dem Kreatin des
Muskelgewebes. Mehrere Untersuchungen haben gezeigt, dass die
heterozyklischen Amine ein erhebliches genotoxisches und mutagenes Potential
